SK: There are some vegan recipes I can&#039;t wait to make for you- you&#039;ll flip. Serious.

Elena: There are so many resources out there for vegan and veggie cooking- you won&#039;t get bored, I promise. I love beans so they became a staple during vegan week- also quinoa and brown (or even black) rice and lots of veggies. If you want something hearty you can bake some sweet potatoes, scoop out the inside, mix that with some spicy sautéed veggies, stuff them back in and top with cashew cheese and bake. As far as salads, we pretty much eat a salad with every meal as it is, so that wasn&#039;t a huge change. Let me know how it goes:)]]></description>

		<description><![CDATA[As I&#039;ve tried to start working out more (mainly to get my boyfriend on a very good, strict workout routine so he can stop smoking), I&#039;ve been trying to eat less carbs and meats in lieu of fresh veggies, lentils and tofu ... your post about going vegan for a week is actually pretty inspiring, as it&#039;s a short amount of time (not crazy drastic) and will be a good boost to kick things off! What other dishes did you make during that week? I imagine a lot of salads, etc?]]></description>
